Before I could start the post for today, I would like to know how many of you are hard-core fans of noodles and pasta?

Extrusion cooking is a thermo mechanical process, that happens through the application of mechanical shear, heat, and pressure to the dough that gives desirable shape and texture to your extruded product. 

The process of extrusion happens inside an extruder

It has three sections. 

1. Feed section 2. Compression section 3. Metering section 

   There are three stages in processing.

  1. The preconditioned food is fed at one end of a tubular structure housing a screw, that transforms it into a semi-solid mass.
  2. The solid mass forced through a die at the discharge end of the screw gives the desired shape.
  3. The food expands due to moisture in it.

There are two main types of extruders. 

  1. Single screw extruder 
  2. Twin-screw extruder

  1. Screw speed
  2. Barrel temperature
  3. Screw barrel configuration
  4. Die opening 
  5. Feed rate

Everyday Energy

Freeze-drying is a dehydration process used to preserve food for a long time, without loss of nutrients. The natural texture, color, and flavor of the food are retained. 

The freeze-drying process has three stages 

  1. Freezing 
  2. Sublimation drying or Primary drying 
  3. Desorption drying or Secondary drying 

During freezing, the water in the food is completely frozen and the ice thus formed undergoes sublimation (it is the direct transition of ice to vapor state without melting) due to reduced pressure, a mild increase in temperature. 

In secondary drying, the temperature is gradually increased to remove almost all the water present in the food. 

About 95% of the water in the food is removed, during freeze-drying making it a reliable process for food preservation.

cane carrier or conveyor is the is the moving apron which conveys the cane into the factory. Cutting and leveling of cane is done by cane leveller which has a set of cane knives, and the shredded cane is sent through a series of crushing mills. Juice is extracted and clarified by addition of lime and sulphur dioxide .

The clarified juice is filtered and sent to the multiple effect evaporator where juice is boiled under vacuum and water from sugar solution evaporates and further concentration of syrup happens in the vacuum pan where initial crystallization begins and finally crystallization ends in the crystallizer. The sugar crystals are separated from the syrup by centrifugation, sugar is dried and transferred to bulk storage bins.

6 Tablespoons of cocoa powder, 

3 Tablespoons of honey 

1 Tablespoon of milk powder 

3 Tablespoons of coconut or olive oil 

Add Cocoa powder and milk powder together to the coconut oil and stir well to make a glossy mixture to this add honey or any sweetener of your choice and cook for about six minutes in low flame. Once the mixture warms, pour into your mold and leave it in your freezer for about 3 hours.

During baking, three basic processes happen.

  1. Expansion of the dough or Oven spring,

2. Drying of the surface,

 3. Crust browning.

Inside the oven, heat travels to the interior of the dough while moisture escapes to the surroundings.

There are two types of baked products

  1. Yeast-leavened
  2. Chemically leavened

Each and every ingredient in baking has a function to perform in the process of baking. The two parameters that are of prime significance are time and temperature.

The leavening agent in simple terms means a substance added to help the dough to rise during oven spring.

Today after a long time, as I get back to my blog, I would like to wish everyone a very happy New year. I want to write about something that the Pongal festival celebrated in Tamil Nadu will not be what it is, without it.
Wondering what it is all about?

 As the harvest festival of Tamil Nadu just got over. One can find new mud pots, freshly harvested turmeric, rice kernels, sugarcane. Cows and bulls with beautifully painted horns, Cow carriages filled with children traveling to villages around. A four day festival of thanksgiving.

Day-one symbolizes leaving old obstacles behind and progressing towards new beginnings with happiness and enthusiasm. Day-two we thank the Sun God for being the prime source of energy to all the living beings in the world. Day-three we thank the bulls and cows that are an integral part of the Farmer’s families and help them at work. Day-four the day of blessings and money as we call it this day is partly dedicated to blessings, and partly to watching new movies released. This time it is Super Star’s Darbar, so it is happiness doubled, a perfect feast for Rajini fans like me. Jallikattu-the bull embracing sport that marks the valor of the rural youth of Tamil Nadu adds an indispensable glory to this festival.

There is no better time to talk about this delightful drink. I would also like to share the happiest moment that repeats itself every year. After the Pongal Pooja and prayer at home, I and my brother cut sugarcane into small portions, sit together and enjoy it. We keep enjoying it until my mom says, enough. Hahaha! This time we have planned for a virtual Sugarcane eating competition through WhatsApp video call as we are miles apart.

Well, I am a big fan of it, there was a sugar cane juice shop in my college where I would stop to have my mango-flavored sugarcane juice every weekend, or whenever I happen to visit java green, at SRM. They were the most refreshing evenings of my life.

High-pressure processing is a cold pasteurization technique by which products already sealed in its final package are introduced into a vessel and subjected to a high level of isostatic pressure transmitted by water. 

Pressures above 400 MPa (+ 4ÂșC to 10ÂșC) or ambient temperature inactivate the vegetative flora (bacteria, virus, yeasts, molds, and parasites) present in food, extending the products shelf life importantly and guarantee food safety.

High-Pressure Processing retains the sensory and nutritional properties of food, because of the absence of heat treatment, and maintains its original freshness throughout the shelf-life.
