As the harvest festival of Tamil Nadu just got over. One can find new mud pots, freshly harvested turmeric, rice kernels, sugarcane. Cows and bulls with beautifully painted horns, Cow carriages filled with children traveling to villages around. A four day festival of thanksgiving.
Day-one symbolizes leaving old obstacles behind and progressing towards new beginnings with happiness and enthusiasm. Day-two we thank the Sun God for being the prime source of energy to all the living beings in the world. Day-three we thank the bulls and cows that are an integral part of the Farmer’s families and help them at work. Day-four the day of blessings and money as we call it this day is partly dedicated to blessings, and partly to watching new movies released. This time it is Super Star’s Darbar, so it is happiness doubled, a perfect feast for Rajini fans like me. Jallikattu-the bull embracing sport that marks the valor of the rural youth of Tamil Nadu adds an indispensable glory to this festival.
There is no better time to talk about this delightful drink. I would also like to share the happiest moment that repeats itself every year. After the Pongal Pooja and prayer at home, I and my brother cut sugarcane into small portions, sit together and enjoy it. We keep enjoying it until my mom says, enough. Hahaha! This time we have planned for a virtual Sugarcane eating competition through WhatsApp video call as we are miles apart. How many of you like Sugarcane Juice? Well, I am a big fan of it, there was a sugar cane juice shop in my college where I would stop to have my mango-flavored sugarcane juice every weekend, or whenever I happen to visit java green, at SRM. They were the most refreshing evenings of my life.

REHYDRATABLE FOODS or freeze-dried foods: Most foods in space was packaged in a dehydrated form and thus rehydrated before consumption(hot cup noodles is one fine example ) these foods are packed in special containers to help them last longer dehydration or removal of water is done to prevent spoilage due to microorganisms and extend shelf life.
The straws used for consumption of liquid food in space has a special one-way valve to prevent the liquid from escaping when not in use. (eg) soups, ravioli and even fruits and fish and eggs, chicken, cheese cereals, etc are packaged dehydrated form and rehydrated before consumption.
freeze-drying is a process of dehydrating frozen food under vacuum condition so that the moisture content in food directly changes to gaseous form without having to undergo the intermediate liquid state through sublimation the food product thus maintains good quality and acceptance.

These are technologies that does not remove water completely but here the water is restricted to an amount to keep the food at desired texture but the percentage of water in IMF foods does not support microbial growth and the water content in IMF foods ranges from 15 to 30 % thus the water present is chemically bound to salt or sugar and thus not available for microbial growth and prevents spoilage due to micro-organisms dried peaches, pears and apricots are some examples of IMF foods in space.
Some foods are consumed in natural form but there is an interesting technology that is involved here too. Here the air is completely removed from the packaged food. The package is sealed so that food stays fresh for a long time.

MODIFIED ATMOSPHERIC PACKAGING:

What is Falafel?

Falafels are chickpeas fritters served either as a snack with dips like Tahini

beauty of the falafels is that they are crisp from the outside but are soft
from inside. And making these is also very easy because unlike other lentil
fritters you don’t have to beat the mixture. Just grind and make.
Use Raw Or Boiled Chickpeas For Falafel?
I have tried falafels with both raw as well with boiled chickpeas. But seriously, nothing to match with the falafels made with raw chickpeas. Soaked chickpeas, when grounded with herbs like parsley and onion-garlic then, believe me, the aroma it gives is simply mind-blowing. They are made so easily whereas the ones made with boiled chickpeas fall apart and is slightly ticklish to make.
My 1 Cup measures 250 ml
1 Cup (200 g) Chickpeas (Kabuli Chana)
1 Onion, Chopped Roughly
3 to 4 Cloves Garlic, Crushed
1/2 Cup Parsley, Chopped Roughly
1/4 Cup Cilantro, Chopped Roughly
Salt As Per Taste
Black Pepper As Per Taste
2 Tbsp Gramflour (Besan)
`1. Wash chickpeas thoroughly and soak them in enough water
for 4 to 6 hours or overnight.
2. Roughly chop onion, garlic, parsley and cilantro.
3. Once chickpeas are properly soaked and doubled in size,
drain all the water and put them in the food processor.
4. Add chopped onion, garlic, parsley, cilantro, salt and
5. Grind coarsely everything. It looks like a crumbled
dough and is wet also because of onions.
6. Take out this crumbled dough in a bowl and add very
little chickpeas flour until no longer wet and you can form balls out of it. It
should not stick to your hands. If it does, add little more chickpeas flour.
7. Keep the dough in the refrigerator for at least half an
hour. If possible for an hour or two. This resting period allows the excess
starch to seep out and mixture binds together easily, thus becomAfter another 6 to 7 minutes, see that the
falafels are properly cooked and golden in coloures

8. Preheat air fryer for 1o minutes at 180 degrees C.
9. Mix and make medium sized balls.
10. When the air fryer is preheated, take out the basket of
air fryer and keep the balls in it and put the basket back in the air fryer.
11. After 7 to 8
minutes. flip the balls so that they are properly cooked from both sides. After
another 6 to 7 minutes, see that the falafels are properly cooked and golden in

Tips to remember
Ensure that you soak chickpeas in enough water as they absorb water and swell after some time.
Before grinding, put the soaked chickpeas in the strainer so that all water drips out.
If grinding in the grinder then it is better to grind chickpeas only. When coarsely grounded then add other ingredients like onion etc.
In the absence of air fryer, cook these in an appe pan or in the oven or pan fry them. Preheat oven to 180 degrees C for 10 minutes, brush oil on the baking tray and lay falafels on it.
If you want to deep fry these falafels then add little more chickpeas flour so that they bind properly. Add one falafel in hot oil. If it breaks or falls apart then add little more chickpeas flour.
Before air frying, you may brush little oil on the balls.

• Preparation Time: 10 minutes
• Cooking Time: Nil
• Serves: 2
• 3 Pc Mangoes
• 1/2 Cup Hung Curd
• 1 Teaspoon Honey
• 1/4 Cup Mixed Fruits, chopped finely (kiwi, plums, grapes, apple etc.)
• 4 Tablespoon, Chocolate Cake, crumbled
• 1 teaspoon Strawberry Coulis/ Crush
•Chop mangoes finely. Reserve some, around 2 tablespoons for
topping and use the remaining for making mango yogurt.
•In a blender put chopped mangoes and hung curd and puree it fine.
Your mango yogurt is ready. Sweeten it with honey. The quantity of honey will depend upon the sweetness of your mangoes. You can have it as it is also.
Now take any beautiful looking glass. Put little strawberry coulis in it.
•Add some crumbled chocolate cake. I used my zebra cake here.
•Put mango yogurt.
• Arrange Fruits
•Again add mango yogurt. Top with some mango pieces.
