😊Fun and Learn with Food Technology

Today after a long time, as I get back to my blog, I would like to wish everyone a very happy New year. I want to write about something that the Pongal festival celebrated in Tamil Nadu will not be what it is, without it.
Wondering what it is all about?

As the harvest festival of Tamil Nadu just got over. One can find new mud pots, freshly harvested turmeric, rice kernels, sugarcane. Cows and bulls with beautifully painted horns, Cow carriages filled with children traveling to villages around. A four day festival of thanksgiving.

Day-one symbolizes leaving old obstacles behind and progressing towards new beginnings with happiness and enthusiasm. Day-two we thank the Sun God for being the prime source of energy to all the living beings in the world. Day-three we thank the bulls and cows that are an integral part of the Farmer’s families and help them at work. Day-four the day of blessings and money as we call it this day is partly dedicated to blessings, and partly to watching new movies released. This time it is Super Star’s Darbar, so it is happiness doubled, a perfect feast for Rajini fans like me. Jallikattu-the bull embracing sport that marks the valor of the rural youth of Tamil Nadu adds an indispensable glory to this festival.

There is no better time to talk about this delightful drink. I would also like to share the happiest moment that repeats itself every year. After the Pongal Pooja and prayer at home, I and my brother cut sugarcane into small portions, sit together and enjoy it. We keep enjoying it until my mom says, enough. Hahaha! This time we have planned for a virtual Sugarcane eating competition through WhatsApp video call as we are miles apart.
How many of you like Sugarcane Juice?
Well, I am a big fan of it, there was a sugar cane juice shop in my college where I would stop to have my mango-flavored sugarcane juice every weekend, or whenever I happen to visit java green, at SRM. They were the most refreshing evenings of my life.

Let me start with the health aspect of Sugarcane juice

  • Sugarcane serves as a source of instant energy and packed with natural sugars, refreshes body and mind.
  • Folic acid helps in easier conception during gestation and prevents any neural birth defects in the fetus.
  •  Sugarcane juice is packed with calcium, Phosphorous and a whole lot of minerals which ensures healthy nails, teeth, bones and prevents tooth decay and bad breath. It cures febrile disorders in children and replenishes lost protein.
  • It Is the best-known juice to treat liver-related disorders and improves the functioning of the liver.
  • Potassium present in the cane juice help balances the ph of the stomach and aids in the secretion of digestive juice and acts as a digestive tonic.
  • Flavenoids in sugarcane prevent diseases due to free radicals.
  • Sugarcane juice has a low glycemic index and so it can be consumed in a considerably moderate amount to ensure good health.
  • Vitamin C in sugarcane juice helps cure soar throat.
  • Sugarcane juice helps in wound healing and strengthens body organs. It helps eliminate toxins from the body.
  • It helps weight loss by reducing bad cholesterol levels in the body and boosts immunity, improves muscle power and treats acidity as well.
  • See that you drink freshly prepared cane juice within half an hour post preparation. As it easily spoiled by microorganisms and does not consume more than two glasses of sugarcane juice in a day.

high-pressure processing

High-pressure processing is a cold pasteurization technique by which products already sealed in its final package are introduced into a vessel and subjected to a high level of isostatic pressure transmitted by water.

Pressures above 400 MPa (+ 4ÂşC to 10ÂşC) or ambient temperature inactivate the vegetative flora (bacteria, virus, yeasts, molds, and parasites) present in food, extending the products shelf life importantly and guarantee food safety.

High-Pressure Processing retains the sensory and nutritional properties of food, because of the absence of heat treatment, and maintains its original freshness throughout the shelf-life.

Hpp is discussed because some countries use high pressure processing for cane juice .

Don’t miss out  on sugarcane enjoy it stay happy and healthy go for this natural drink this pongal

let us see what the true saviours of our nation eat. Before World war 1 Indian soldiers received only cash allowances. The nutritive value of the food given to our soldiers was neglected.

During the second world war, the supply of rations became difficult due to the rise in the cost of living and our soldiers got affected by malnutrition. The government authorities recommended foods of higher nutritive value to our soldiers.

After independence, the Indian soldiers were supplied with food preserved by traditional methods. There were difficulties in transporting, storage, handling, and packaging because these foods were prone to physical and chemical deterioration during these stages.

DFRL: The defence food research laboratory Mysore was established on 28th December 1961 under defence research and development organization to fulfil the food needs of the army, navy and air-force. The prime aim was to engineer lightweight convenient packaged food with a longer self-life that suits varied climatic conditions.

]Different varieties of food bar

DFRL has developed a long list of of nutritious bars to meet the energy needs of soldiers such as Compressed tasty bar, Protein-rich Composite cereal bar, Sweet and sour tasty bar, Flax oat tasty bar rich in soluble fibers, Ergogenic energy-rich bar, Barley bar rich in glucan, Omega 3 rich bar, Cocoa delight bar rich in antioxidants and fiber, Composite tasty bar for high altitudes which is light weight and easy to carry and each bar serves a specific nutrition need with the help of a specific functional ingredient with a calorific range of 400-540 kcal with shelf life of about 6-15 months.

BARLEY BAR : Lifestyle changes have led to the decrease in the intake of fiber. DFRL food scientists have developed bars using barley grains in order to provide the amount of fiber that is necessary in an individual’s daily diet.

I dedicate my post to the food Scientists who have gone a long way in engineering foods of great comfort.

Space foods”

I want to take all my readers on a space journey to explore space foods and the technologies involved. I hope all my readers  would enjoy this journey so let us give it a start…

Have you ever wondered what Astronauts in space eat?

Come let’s explore together .

NASA’S the first scientist to eat food in space was John Glenn. First food to be eaten in space was Apple sauce.

In the second space program NASA food scientists included Shrimp, Cocktail, Chicken, Vegetables and Pudding.
There are special rules for space foods

1. Minimize the crumbs

2. Minimize packaging and thrash volume

3. Minimize the weight of the food

REHYDRATABLE FOODS or freeze-dried foods: Most foods in space was packaged in a dehydrated form and thus rehydrated before consumption(hot  cup noodles is one fine example ) these foods are packed in special containers to help them last longer dehydration or removal of water is done to prevent spoilage due to microorganisms and extend shelf life.

The straws used for consumption of liquid food in space has a special one-way valve to prevent the liquid from escaping when not in use. (eg) soups, ravioli and even fruits and fish and eggs, chicken, cheese cereals, etc are packaged dehydrated form and rehydrated before consumption.

Freeze-drying technology:

freeze-drying is a process of dehydrating frozen food under vacuum condition so that the moisture content in food directly changes to gaseous form without having to undergo the intermediate liquid state through sublimation the  food product thus maintains good quality and acceptance.

Meals and even ice-creams that are made available to astronauts in space are freeze-dried

The foods that are heated to high  temperatures to prevent bacterial growth and are packaged in bimetallic or aluminum cans or flexible retort pouches for instance mushrooms, tomatoes, eggplant are few examples of thermostabilized foods.

These are technologies that does not remove water completely but here the water is restricted to an amount to keep the food at desired texture but the percentage of water in IMF foods does not support microbial growth  and the water content in IMF foods ranges from  15 to 30 % thus the water present is chemically bound to salt or sugar and thus not available for microbial growth and prevents spoilage due to micro-organisms dried peaches, pears and apricots are some examples of IMF foods in space.

Some foods are consumed in natural form but there is an interesting technology that is involved here too. Here the air is completely removed from the packaged food.  The package is sealed so that food stays fresh for a long time.

Condiments  are made available suspended in oil or dissolved in water pepper is suspended in oil while salt is dissolved in water these liquid salt and liquid pepper are stored polyethylene bottles.

Bread sandwiches are not possible in space  as the bread slices tend to float so food scientists at NASA developed tortillas – a flatbread made of wheat flour to serve the purpose they kept it fresh up to  one year by the use of oxygen scavengers which helps in removing the oxygen in the package and thus creating a modified atmosphere. Ethylene is an example of oxygen scavenger.

Some foods are exposed to radiation to kill mold or bacteria on food also to extend its shelf life. Exposure of ionizing radiation in the form of x rays, gamma rays and electron beam to destroy microorganisms. Safety limits of radiation are set according to the type of food and the purpose of irradiation.

Food scientists at  DRDO and CFTRI Mysore are exploring new technologies to make available the specialties of  Indian cuisine.

DRDO has created initial success in biscuits, pastries and  dried juice and lemon rice with a list of  innovative technologies which are to be later discussed in the blog food scientists has formulated even chicken biryani which is supplied to astronauts and it has a shelf life is up to one year.

Some more interesting facts

  1. TANG one  of the well-known juice brands became famous when it was supplied to astronauts  in the space shuttle it served as a vitamin C  supplement.
  2. As the space shuttle is shielded from Cosmic rays the scientist does not get enough of the sunshine vitamin so special care should be taken to provide vitamin D in the diet of space scientist.

prebiotics are dietary fibers that serve as food for the gut-friendly bacteria that live in the gastrointestinal tract. As we discussed earlier, Probiotics help in keeping our gut happy by providing the right balance of MICROFLORA (especially bacteria) to prevent diseases and boost the immune system.

Prebiotics are like fertilizer for probiotics to grow and flourish probiotic bacteria require this special food group known as prebiotics. let us now look at some natural sources of Prebiotics

  1. Infant & Child health : There is no other better source of Prebiotics than mother’s milk for the baby. As we all know it is a great threshold of nutrients so it is considered as a universal food for infants. Apart from this as you start with baby food you can add sprouted Ragi flour, roasted Bengal gram powder, almonds dry roasted and powdered, dry roasted rice flour add equal amount of the four ingredients and your health mix is ready. Add a glass of milk and brown sugar as needed.
  2. Physical fitness: Dietary fibers that also improve the growth and metabolism of gut friendly bacteria are prebiotics. Dietary fibers are included in the diet to improve digestion.

Research suggests that horse gram in a dry roasted and powdered form a spoon full when mixed with a glass of water can be used as a weight loss drink early in the morning owing to the rich dietary fibers and nutrients in it.

“Food high in fibers reduces inflammation and eliminate toxins from your intestines”.

“Including fiber rich foods in your diet helps to keep calorie intake in control and that eventually leads to weight management”

Srishti(Health and fitness blogger)

Want to know more about weight loss and fitness follow the link: https://trendtofit.com/

3. Mental heath chamber :

Blue berries are natural source of prebiotics and regular consumption leads to reduction in effects of depression and improves the level of serotonin secretion in the brain.

Your healthy choices are not just healthy for your body but your mind too.” Remember when you feed your body with choices of food see that you feed it right because you perform well when your mind and body are in harmony.”

Priyanka Nair (mental health awareness blogger)

4. Women health

Garlic a well known and easily available prebiotic food acts as a blood purifier as well as improves bone health by improving the levels of estrogen and prevents estrogen deficiency after menopause .

5. Food Technology for life :

Prebiotics are non digestible carbohydrates not digested in the intestine but gets fermented by the gut friendly bacteria in the gut and these are energy sources that help the probiotic bacteria that live in the gut to grow and increase in number which will help to maintain the right balance of the microbiota .

All prebiotics are fibers but not all fibers are prebiotics”

All dietary fibers improve digestion and aid in weight management but not all the fibers help in the growth and metabolism of the probiotic bacteria.

Apart from being the food source for the probiotic environment prebiotics inhibit the growth of harmful bacteria and prevents several diseases, helps maintain heart health and also prevents obesity and also improves overall health of individuals.

without food processing the food needs of today would be incomplete. Not all processed foods are unhealthy . There are certain foods like sea weeds commonly know as agar agar which become edible only after processing. Sea weeds are found to have a fiber content of about 50 to 85%. It is one of the natural prebiotic food sources.

there is a short, simple and kid friendly recipe which is a special bonus recipe for my readers. Whey is nothing but the light green liquid that settles on top of the curd.

Whey protein-rich chocolate pudding

ingredients needed :

50 grams of china grass

2 tablespoons of sugar

2 tablespoons of chocolate powder or vanilla essence

1 glass of milk

1 glass of homemade and filtered whey

1. Boil the china grass in a glass of water until it turns to be a thick transparent liquid

2. Meanwhile, boil milk and add chocolate powder, sugar to it

3. pour the chocolate milk to the china grass solution and bring to boil for 5 to 10 minutes

4. allow to  cool  down for sometime

5. add the whey to the mixture that is set aside to cool

6. refrigerate for 2 hours, and your dessert is ready, there you go

Processed prebiotic drinks are widely available in the market. As I always say do read your nutrition label before making a processed food choice .Check for allergens and consult your doctor before taking any kind of prebiotic supplement.

Focus strategy used for marketing of prebiotics

This is when a food company focuses on a particular target population for example people who want to reduce weight, be healthy become main focus for such prebiotic supplements. These companies keep in mind the need of their target population when it comes to innovation of new products or improvisation of existing products.

7. Recipe Corner :

Healthy & Crispy Falafel, made in Air Fryer is a wonderful example of how simple, oil-free dishes can also be full of taste and lip-smacking. And these Falafel are vegan and gluten-free too.

What is Falafel?

Falafel is a famous Middle Eastern street food made of chickpeas. In simple words, Falafels are chickpeas fritters served either as a snack with dips like Tahini or Hummus or is tucked in the pockets of pita bread or make a burger.

The beauty of the falafels is that they are crisp from the outside but are soft from inside. And making these is also very easy because unlike other lentil fritters you don’t have to beat the mixture. Just grind and make.

Use Raw Or Boiled Chickpeas For Falafel?

I have tried falafels with both raw as well with boiled chickpeas. But seriously, nothing to match with the falafels made with raw chickpeas. Soaked chickpeas, when grounded with herbs like parsley and onion-garlic then, believe me, the aroma it gives is simply mind-blowing. They are made so easily whereas the ones made with boiled chickpeas fall apart and is slightly ticklish to make.

My 1 Cup measures 250 ml

1 Cup (200 g) Chickpeas (Kabuli Chana)

1 Onion, Chopped Roughly

3 to 4 Cloves Garlic, Crushed

1/2 Cup Parsley, Chopped Roughly

1/4 Cup Cilantro, Chopped Roughly

Salt As Per Taste

Black Pepper As Per Taste

2 Tbsp Gramflour (Besan)

`1. Wash chickpeas thoroughly and soak them in enough water for 4 to 6 hours or overnight.

2. Roughly chop onion, garlic, parsley and cilantro.

3. Once chickpeas are properly soaked and doubled in size, drain all the water and put them in the food processor.

4. Add chopped onion, garlic, parsley, cilantro, salt and pepper.

5. Grind coarsely everything. It looks like a crumbled dough and is wet also because of onions.

6. Take out this crumbled dough in a bowl and add very little chickpeas flour until no longer wet and you can form balls out of it. It should not stick to your hands. If it does, add little more chickpeas flour.

7. Keep the dough in the refrigerator for at least half an hour. If possible for an hour or two. This resting period allows the excess starch to seep out and mixture binds together easily, thus becomAfter another 6 to 7 minutes, see that the falafels are properly cooked and golden in coloures easy to form balls.

8. Preheat air fryer for 1o minutes at 180 degrees C.

9. Mix and make medium sized balls.

10. When the air fryer is preheated, take out the basket of air fryer and keep the balls in it and put the basket back in the air fryer.

11.  After 7 to 8 minutes. flip the balls so that they are properly cooked from both sides. After another 6 to 7 minutes, see that the falafels are properly cooked and golden in colour.

12. Serve these with hummus or with pita bread and hummus.

Tips to remember

  1. Ensure that you soak chickpeas in enough water as they absorb water and swell after some time.
  2. Before grinding, put the soaked chickpeas in the strainer so that all water drips out.
  3. If grinding in the grinder then it is better to grind chickpeas only. When coarsely grounded then add other ingredients like onion etc.
  4. In the absence of air fryer, cook these in an appe pan or in the oven or pan fry them. Preheat oven to 180 degrees C for 10 minutes, brush oil on the baking tray and lay falafels on it.
  5. If you want to deep fry these falafels then add little more chickpeas flour so that they bind properly. Add one falafel in hot oil. If it breaks or falls apart then add little more chickpeas flour.
  6. Before air frying, you may brush little oil on the balls.

All the fermented foods are a great source of probiotics in general. There is a long list of healthy fermented probiotic foods that belong to the traditional cuisines of different countries all over the world. What makes probiotics a healthy choice of food is the age-old fermentation process and the stains of active gut-friendly bacteria in the culture.

In India, people consume sweetened curd as a part of their tradition before starting any new job. I being an Indian blogger want to give a native Indian touch to the very first post so chose to write about Probiotics. I hope all the eight interesting and indulging sections in the blog will be informative and helpful to all my readers.

people tend to think that curd and yogurt are different names given to the same milk-based fermented product that is consumed all over the world. However, they are significantly different owing to the bacterial culture used to initiate the fermentation process. Let us understand the difference before going into detail.

“In yogurt preparation, only two specific strains of bacteria namely lactobacillus bulgaricus and streptococcus thermophilus are used. Whereas, the curd is found to contain a broad range of Lactobacillus bacteria.”

1. Child health: A scoop of curd or yogurt is recommended daily to help replenish the good gut-friendly bacteria in your child’s gut. Probiotics are useful in preventing gastric trouble in children and improve digestion also helps strengthen the immune system and promotes healthy bones and teeth. It helps treat diarrhoea due to use of antibiotics in children to treat diseases like common cold and fever.

  • Avoid excess sugar and artificial flavours while you go for processed yogurt /curd for children when you want to make it a part of their daily diet.

you can add natural fruits like mango, strawberries, cherries, dates to the yogurt that you add to smoothies and shakes. Natural sugar from these fruits is always a wiser choice .

2. Physical fitness and weight management

  • Cinnamon a common spice is known for its health benefits. Half teaspoon of cinnamon powder, when added to a glass of buttermilk along with a small piece of  grated ginger and few curry leaves, will aid in weight management

Make health  your priority

  • Cinnamon tea helps improve the body’s immunity, it is also effective in maintaining the right sugar level in the case of type 2 diabetes, help treat menstrual cramps in women, it acts as a digestive aid and helps weight management.- Srishti (A health and fitness blogger)  want to know more about Cinnamon tea follow the link https://trendtofit.com/proven-benefits-of-cinnamon-tea/
  • Further if you want to know more about health and fitness go to https://trendtofit.com/

3. Mental health chamber

Mental health is as important as physical health, make it practice to exercise, sleep and eat well to balance both.

“It would be magical just to change your diet and find a good change in your mood.”

Curd or yogurt reverses depressive behaviour. Recent researches suggest that regular consumption of probiotics help improve mental health by effectively reducing the effect of anxiety and depression.

Some practical mental health tips to remember:

  • The first tip is for the teenagers who try to hide their feelings from their parents. Always remember your parents can be your good friends too so it is completely okay to share it with them when something is making you feel stressed or depressed.
  • See that you talk it out and feel better.-Priyanka Nair (mental health awareness blogger). Want to know more about mental health follow the link https://priyankaspen.com/

4.Women health

  • Curd or yogurt is  rich in calcium and therefore  helps prevent osteoporosis in women above  30 years. The probiotics, when consumed daily, prevents vaginal infections.
  • Helps prevents ulcer and helps maintain a healthy digestive system.

5.Food technology for a healthy life

Probiotics are a group of live beneficial microorganism that are naturally present in our digestive system. Bacteria aren’t all bad. Our body needs the right balance of good gut-friendly bacteria. The human gut contains a trillion microorganisms like bacteria virus and fungi. It has an array of approximately 1000 species. When bad bacteria outnumber good bacteria illness occurs.

Lactobacillus and bifidobacterium are the most useful bacteria used for fermentation of different traditional probiotic foods.

Marketing niche and Parameters that help make better choices when it comes to processed food :

A whole lot of health-conscious people become target customers for this kind of processed probiotics. Even market research and test marketing of such products primarily have these target customers in mind and then they  eventually  extend the market.

Some tips to choose wiser :

  • As far as possible try to avoid probiotic supplements.
  • Check for strains of lactobacillus and bifidobacterium in the nutrition label of probiotic food.
  • In case of lactose intolerance avoid curd and yogurt and go for other fermented food like sauerkraut and tempeh.
  • Check for food allergens, check for expiry date, shelf life, proper packaging, and sealing.
